There is a flavor you won’t find on Google Maps, and it’s the flavor of the real Sassari. Many tourists arrive in Sardinia asking only for the "maialetto" (suckling pig). It’s delicious, for heaven’s sake. But limiting yourself to that is like going to Rome and only ordering Carbonara.


Northern Sardinian cuisine is a cuisine of character, made of strong flavors from the land, the sea, and millennia-old traditions. At Villa Malvasio, we want you to experience the island like a local, guiding you toward true local excellence. Here is our ultimate "Map of Taste" to make your mouth water before you even unpack!


The 4 Secret Dishes (to feel like a true local)

Stepping off the beaten tourist path, you’ll discover that Sassari has a unique culinary soul.

  • Fainè: The local alternative to pizza. It’s a humble yet incredibly flavorful dish, an inheritance from Genoese domination (it’s a chickpea flatbread) strictly baked in a wood-fired oven. Thick, soft on the inside, and crispy on the outside. Purists eat it with oil and black pepper, but true gourmands ask for it with onions or sausage.
  • Monzette and Zimino: Here you can tell who is a tourist and who is a traveler. Monzette are small snails with a greenish shell, eaten roasted while happily getting your hands dirty. Zimino, on the other hand, is the scent of Sassari’s festivals: grilled veal offal cooked in the alleys of the city center. Only for true foodies.
  • Roasted Pecorino: A comforting delight. Melted cheese served steaming hot on crispy Carasau bread, sometimes enriched with a drop of bitter honey. Pure magic.
  • The Real Seada: Forget the trivial "fritters". The authentic Seada is a handmade pastry chest filled with stringy fresh cheese, fried on the spot, and covered with strawberry tree or chestnut honey.


His Majesty the Porcetto: Avoid the "Romanian Clone"

If you come to Sardinia and don’t eat the Porcetto (or Porceddu), you’ve missed the mark. But beware of traps! Once I tasted a stringy and rubbery suckling pig in an agriturismo. Investigating, I discovered it was frozen meat imported from abroad and cooked in an electric oven. A sacrilege!


The True Sardinian Suckling Pig follows strict rules dictated by early 1900s recipe books:

  • It must be strictly Sardinian and milk-fed (maximum 8 kg).
  • It must cook slowly for 3 or 4 hours, skewered half a meter away from an aromatic wood fire (olive, juniper, or myrtle).
  • The skin becomes "crackling" thanks to the ritual of istiddiare: dripping flaming lard onto the rind, which "fries" it, making it like a biscuit.


The "Clone Fish" Trap

Last night, two German guests returned to Villa Malvasio with long faces. The reason? A dinner in a blatantly touristy place that served them two perfectly identical sea breams with absolutely no flavor. "Plastic fish," they renamed it. They had just encountered the famous farmed "Clone Fish."


In a real seafood restaurant, the fish have different shapes (the sea doesn’t make photocopies), the raw seafood smells of iodine and not of a refrigerator, and the catch comes strictly from the nearby Gulf of Asinara.
